Soil: Heavy mechanichal compasition with a bit of calcium carbonate.

Yield per plant: 2 - 3.5 depending on the variety.

Winemaking: Xinomavro (blanc de noir) is fermented alongside Assyrtiko at 15c, while on malagouzia cold soak is applied for 7-8 hours. fermentation at 15 degrees and after the end of the precidure comes the blending.
